Classic Beef Burgers with Avocado & Tomato Salsa

Serves 4

Ingredients

For the Beef Burgers

  • 750g beef mince
  • 1 onion
  • 2 garlic cloves
  • 1 tsp hot chili powder
  • 1 tsp Dijon mustard
  • 50g breadcrumbs
  • 1 large egg, beaten
  • Salt & pepper

For the Avocado & Tomato Salsa

  • 2 large vine tomatoes
  • 1 firm, ripe avocado
  • ½ small red onion
  • 1 tbsp fresh lime juice
  • 1 tbsp fresh coriander, chopped
  • Salt & ground black pepper

Instructions

For the Burgers

  1. Work all the ingredients together by hand in a large bowl.
  2. Cover the bowl and marinate in the fridge for a couple of hours
  3. With damp hands, shape the meat into 8 burger patties, or use a burger press
  4. Grill for approx. 3-5 minutes on each side until cooked through.

For the Salsa

  1. Quarter the tomatoes and scoop out the seeds. Chop finely
  2. Peel the avocado, remove the stone and dice the flesh
  3. Chop the onion finely
  4. Combine all ingredients in a bowl and spoon on top of your burgers.
