- 1 celery stalk, chopped
- 1 small green apple, unpeeled, cored and diced
- 50g cucumber, chopped
- 25g baby spinach, chopped
- 2 tbsp fresh coriander leaves and stalks, chopped
- ½ tsp spirulina powder
- 175ml light coconut milk
- Pumpkin seeds (optional)
- Place all the smoothie ingredients into the blender and whizz for 15-20 seconds until smooth. Pour into a glass to serve and top with the pumpkin seeds, if desired.
Tips: As an alternative, try swapping the coriander and coconut milk for fresh mint and natural yoghurt. If you prefer a thinner smoothie, add up to an extra 100ml coconut milk.
