- 2 tbsp olive oil
- 1 fresh red chilli, deseeded and chopped
- handful fresh coriander leaves
- 1 lemongrass stem
- 1 lime, quartered
- 2 garlic cloves, whole
- Mix all of the ingredients together, place in a Self-Seal Bag along with your meat and leave in the fridge for at least 4 hours. This marinade works well with chicken, duck or pork.
