Fish in Cider for the Remoska

Ingredients

Standard Remoska

  • 4 white fish fillets
  • 2 tomatoes, sliced
  • 50g (2oz) mushrooms, sliced
  • ½tsp cayenne pepper
  • ½ lemon
  • 300ml (10floz) cider, dry
  • 25g (1oz) butter
  • 25g (1oz) plain flour
  • 1tbsp double cream (optional)
  • salt and pepper
  • parsley, chopped to garnish

Grand Remoska

  • 6 white fish fillets
  • 3 tomatoes, sliced
  • 75g (3oz) mushrooms, sliced
  • ¾tsp cayenne pepper
  • 1 lemon
  • 400ml (14floz) cider, dry
  • 40g (1oz) butter
  • 40g (1oz) plain flour
  • 2tbsp double cream (optional)
  • salt and pepper
  • parsley, chopped to garnish

Instructions

  1. Place the fish in the Remoska and arrange the tomatoes and mushrooms on top. Season with salt and pepper, the cayenne pepper and the juice of the lemon. Pour in the cider.
  2. Cook for approx. 20 minutes for the Standard Remoska or 25 minutes for the Grand Remoska.
  3. Carefully lift out, place on a serving dish and keep warm.
  4. In a saucepan, melt the butter, add the flour and cook, stirring, for 2 minutes.
  5. Drain the liquid from the fish and gradually stir it in until the mixture thickens and stir in the double cream (if using).
  6. Garnish the fish with parsley and serve with the sauce.
