- 12 cherry tomatoes, halved
- 1 cucumber, peeled and cubed
- 1 red pepper, de-seeded and diced
- ½ red onion, finely sliced
- 150g feta cheese, roughly broken
- 1 small, firm lettuce, roughly torn
- 50g black Kalamata olives
- 1 generous sprig of fresh oregano, roughly torn
- 1 generous sprig of Greek basil, roughly torn
- 100ml extra virgin olive oil
- 3 tbsp red wine vinegar
- Sea salt & freshly ground black pepper
- Place all of the salad ingredients in a large bowl.
- Drizzle with the olive oil and red wine vinegar and season to taste.
