- 100g soft margarine
- 100g caster sugar
- 2 eggs
- 100g self-raising flour
- 1 tsp baking powder
- Grated rind of 1 orange
- Preheat oven to 200°C/400°F. Line a 12-hole bun tin with cupcake cases.
- Place all the ingredients in a large bowl and beat well until smooth.
- Half-fill each paper case with mixture.
- Bake for 15-20 minutes until risen and golden brown. Cool on a wire rack.
Tip: We decorated these cupcakes using our Duo Colour Icing Kit. We made a batch of butter icing, flavoured half with vanilla extract and half with cocoa powder, but you could also use orange extract instead of the vanilla.
