Luxury Fish Pie for the Remoska

Ingredients

Standard Remoska

  • 500g (1lb) white fish fillets, cooked, skinned, and flaked
  • 700g (1½lb) potatoes, peeled, cooked and mashed
  • 50g (2oz) butter or margarine
  • 300ml (10floz) milk, hot
  • 1tbsp fresh parsley, chopped
  • 1tbsp fresh fennel leaves
  • 50g (2oz) shrimps
  • 2 eggs, hard-boiled, sliced
  • ½tsp nutmeg
  • salt and pepper
  • butter for greasing
  • 3tbsp fresh breadcrumbs, browned
  • 2 tomatoes, skinned, sliced
  • olive oil
  • ½tsp sugar

  • 700g (1½lb) white fish fillets, cooked, skinned, and flaked
  • 1kg (2lb) potatoes, peeled, cooked and mashed
  • 75g (3oz) butter or margarine
  • 400ml (14floz) milk, hot
  • 2tbsp fresh parsley, chopped
  • 2tbsp fresh fennel leaves
  • 75g (3oz) shrimps
  • 3 eggs, hard-boiled, sliced
  • ¾tsp nutmeg
  • salt and pepper
  • butter for greasing
  • 4tbsp fresh breadcrumbs, browned
  • 4 tomatoes, skinned, sliced
  • olive oil
  • ¾tsp sugar

Instructions

  1. Mix the fish, potatoes, butter, milk and the herbs together, beating well to combine.
  2. Fold in the shrimps, eggs, seasoning and nutmeg.
  3. Lightly butter the Remoska pan, turn in the mixture and smooth the top.
  4. Sprinkle on the breadcrumbs, arrange the sliced tomatoes around the perimeter and drizzle them with oil and a light sprinkling of sugar.
  5. Cook for approx. 30-40 minutes.
