- 500ml water
- 60g chopped mint leaves
- 100g sugar
- Juice of 1 lemon
- A drop of green food colouring
- Place the water, chopped mint and sugar in a pan and bring to the boil, stirring until the sugar dissolves. Reduce the heat, simmer for 3 minutes then stir in the lemon juice.
- Place a sieve over a bowl and pour the mixture through. Discard the mint leaves. Leave the juice to cool.
- Pour into lolly moulds, freeze for 30-45 minutes, push in the lolly sticks and freeze until solid.
