- 4 eggs, beaten
- 4 tbsp caster sugar
- 1 tsp ground allspice
- 150ml vanilla syrup
- 400ml full fat milk
- Cinnamon sticks, to decorate, optional
- Freshly grated nutmeg, to garnish
- Place the eggs and sugar in a bowl and whisk until combined.
- Add the allspice, vanilla syrup and milk and whisk until combined. Cover with clingfilm and chill for 30 minutes.
- Gently whisk again and strain into glasses.
- Add a cinnamon stick, if required, and finish with a light grating of nutmeg.
