- 60ml white rum
- 100ml passion fruit juice
- 50ml coconut milk
- 2 passion fruit, flesh scooped out and sieved, reserve a little for garnish
- 10 ice cubes
- Place all the ingredients into a blender and blitz until smooth.
- Pour into a glass and sprinkle with the reserved passion fruit.
Tip: For an alcohol-free version, just miss out the rum.
Tip: To make a classic piña colada, swap the passion fruit juice for pineapple then decorate with a quarter slice of pineapple with the skin left on.
